Marie Frank Would Totally Put Caviar On Ice Cream
The Copenhagen baker has wild flavor ideas and talks all about them on today's She's My Cherry Pie
“Mom, the sprinkles are weird!”
Well, darling, the sprinkles are caviar.
Marie Frank was up to what Marie Frank does best: inventing flavor combinations that seem beamed down to earth from outer space. In this case, oolong ice cream topped with hazelnut oil and caviar. Casual, casual. Her kids, who’d been begging for ice cream with sprinkles, went in for a sneaky taste and had no idea what they were in for. “Please promise never to put the weird sprinkles on ice cream ever again!!” they requested.
Marie is the Copenhagen-based author of the recent cookbook More Than Sweet: Desserts with Flavor and her Substack by the same name. She’s our guest this week on She’s My Cherry Pie, talking to host Jessie Sheehan about how she got into the world of restaurant-worthy home baking when she was at home on maternity leave. Not the usual storyline! Put baby down for a nap, get into the kitchen to make seven components for a three-day tart.
Rather than uproot her life and go to culinary school, she ordered culinary school baking textbooks and found that if you just ask chefs online, “how’d you make that?” they might just answer. Marie was a rabidly curious student, and soon, tens of thousands were following along to see what she was coming up with: Popcorn Flour Chocolate Cake, Hojicha-Glazed Corn & Almond Madeleines, and Langoustine (Yes, Really) Ice Cream. What, you never craved a little lobster ice cream? (Seriously, though, take a scroll through her IG.)
Then, Marie and Jessie walk through her recipe for Brunsviger, a traditional Danish yeasted cake she describes as a “cinnamon bun-focaccia hybrid” topped with brown sugar caramel and her additions: grapes and rosemary.
