About 13 years into her cooking career, India Doris finally worked in a kitchen with another woman. And that’s recent history, folks. As she points out—and who can disagree?—“Unless you’re serving food to just men, sure, hire only men!”
This week, Radio Cherry Bombe host Kerry Diamond talks to the sharply funny chef and co-owner of Markette, a must-visit new restaurant in NYC’s Chelsea neighborhood, and The Argyle, the secret bar downstairs. Vintage cookbook chase: The Pie Hole? No, lol, The Pie Room, India realized, was the cookbook that left a lasting impression on her as a young cook. The cookbook comes from Calum Franklin, London’s “King of Pies,” and is filled with those unbelievably cozy meat pies you want to eat on knotty reclaimed tables with dark beer. (Nigella is also a fan.)
