Happy 40th, Sabrina Rudin!
The founder of Spring Café Aspen (with locations in Aspen and New York), turned 40 the day we recorded this episode of Radio Cherry Bombe. All good things are happening to Sabrina, who starts her days by “future journaling” the vision she has for the days ahead. Should we all be doing this?
It seems to be working for Sabrina. Her new book, Healthy with a Side of Happy: 100 Plant-Based Recipes to Feed Your Family, comes out April 28th. “My goal for my forties is really to just embody that woman I finally feel like I’ve become, and to let the rest go, and just live it,” she told host Kerry Diamond.
She followed it up with some fantastic advice, courtesy of her mother, who often tells Sabrina:
“The universe only ever has three answers. Yes. Not yet. Or, I have something better in store for you.”
We hope that whoever needed to hear that today heard it loud and clear.
This isn’t normally a self-help podcast, but we’re rolling with it right into a Superhero Burrito. That’s the most beloved item at Spring Café, which is one of those bright and cheery places that makes you want to drink a green juice every morning and cover everything in tahini sauce. The burrito? A scramble of eggs or tofu, a pile of veggies, and vegan mozzarella, wrapped in a sprouted grain tortilla. The superhero we need.
Healthy with a Side of Happy is Sabrina’s collection of low-on-the-food-chain recipes she’s been eating since she was a kid in New York. Lots of tofu, sprouted grains, and fresh produce in straightforward recipes, plus a few family faves, like her grandmother’s noodle kugel. “I really wanted to teach people how to go to the farmers’ market, buy a bunch of veggies, and eat them in a delicious way, and in a way that would make them feel happy.” Mission accomplished, Sabrina.

Yes, kugel is one of Sabrina’s favorite dishes of all time, thanks to her grandmother Hazel, who lived til 106 (maybe the secret to longevity is kugel). Sabrina shared her recipe for a noodle kugel with us from her new cookbook. Her version uses vegan dairy—but spares none of the flavor or deliciousness. We think Grandma Hazel would love it.
